HAD to share this one because it’s so easy, tasty and healthy. Salmon is a fantastic source of nutrients and cooks really quickly. I learned about this recipe one night watching Ina Garten, The Barefoot Contessa, on the Food Network. It was an episode titled “Ina’s Takeout,” in which she cooked a full meal that she delivered to a friend who was too busy to meet up forĀ  a proper lunch. Here are her directions:

Preheat the oven to 450 degrees F.

For the salmon, heat a dry oven-proof saute pan over high heat for 4 minutes. Meanwhile, rub both sides of the salmon fillets with olive oil and season the tops very liberally with salt and pepper. When the pan is very hot, place the salmon fillets seasoning-sides down in the pan and cook over medium heat without moving them for 2 minutes, until very browned. Turn the fillets and place the pan in the oven for 5 to 7 minutes, until the salmon is cooked rare. Remove and serve hot.

Here’s how I modified the directions in order to avoid a trip to the grocery store:
1. I used extra virgin olive oil
2. I used 1 large salmon steak while Ina used 2 fillets
3. By oversight, I cooked it 3 minutes on high heat on the stove and 6 minutes in the oven. It wasn’t overcooked at all but it was more cooked than I like.

In the episode, she explained that moving the salmon from stovetop to oven is the way restaurants cook salmon. I’ve never tried it before and LOVED it. Will do this from now on.
